Job Description:/h3:
The Restaurant Chef will have full responsibility for the back of house, training kitchen staff, daily kitchen operations, scheduling of kitchen staff, food and grocery ordering, inventory, achieving and maintaining budgeted cost of goods, hourly kitchen staff management and menu development. The Chef will also prepare weekly reports and meet with the GM to review and discuss performance results.
Restaurant Chef Job Responsibilities
:Capable of handling the volume of a 100 seat restaurant plus catering.
:The candidate must be a hands on individual with a passion for scratch kitchens and farm to table sourcing.
:Review financial statements, sales reports, and other performance data to measure productivity and to identify areas needing cost reduction or program improvement.
:Direct and coordinate activities concerned with production, pricing and sales.
:Prepare kitchen staff work schedules and assigns specific duties.
:Monitor suppliers to ensure goods or services are provided within budgetary limits.
:Direct or coordinate budgets to fund kitchen operations and increase efficiency.
:Establish and/or implement kitchen policies, goals, objectives, and kitchen procedures.
:Works with GM to plan or direct activities such as special events, holiday menus, etc.
:Establish and maintain an organized record keeping system (filing system) to keep track of invoices, vendor agreements, special events, inventory, etc.
:Implement kitchen inventory management system (procedures and inventory software) to ensure proper stock levels are maintained.
:Reconcile inventory levels w/ sales weekly to ensure that inventory is accounted for.
:Conduct weekly inventory and cost of goods reporting.
:Maintain an acceptable range of kitchen labor costs.
:Ensure that all kitchen staff follow standard procedures and implement a system of accountability.
:Ensure that all kitchen staff maintain a high level of customer service and cleanliness of kitchen at all times, from stewardship to prep to final plate presentation.
:Attend meetings w/ partners as needed.
:Maintain Serve Safe certification.
